I called Xerox and they directed me to the vendor, who gave me the following information that worked:
On the copier itself:
Tap Login/Logout.
Enter feature code *1288154991 and tap Next.
(Machine reboots)
If it needs to be re-enabled:
Login/Logout
*1288154990 and tap Next.
(Machine reboots)
It is always where the Repository is located for convenience when setting up any Xerox machine.
Maybe I'm doing something wrong. The problem I am seeing is that the Default folder does not show up in the Scan tab under Job Templates. Is that where I am supposed to look?

As for Security concerns, just make the default template go to a folder that does not exist, then it will simply fail to scan.
How does an official feature request get created? This really needs to be an option. It's a security concern the customer has - if a user accidentally scanned a confidential document, it would end up in the root of the scanning folder that's currently configured. They don't have read access to that folder, but it is a valid concern.
DFE plays no part in it, the Default cannot be hidden at this time either, no matter the firmware level, I just checked and it still has not been requested officially (FER) so it isn't coming either.
There are a lot of requests informally, but only the formal ones get considered by engineering.
I need to hide the default template under Network Scanning. Does anyone know if a firmware update has been released since this old thread?
I tried checking for a firmware update myself, but I don't know what print server the customer has, or how to find that out.
