Invalid Sender Address - possible error in Machine email address

We have an Apeos C2060. Whenever anyone scans, we get an invalid sender address, whether that address is in the address book or not.
I've done some digging and one suggestionm was to confirm that the Machine's E-mail Address was correct. I've discovered that this address is the same as the person who left, and that email address no longer exists.
Could this be the issue? If so, how do I resolve it? I've tried logging in as System admin, but the details left by the previous person are invalid.
