I want to completely remove the email address that the scanner uses to send out emails when you do a 'scan to email'. To be clear this is not an email address in an address book.
I tried just removing the information but it just says "this field required" and does not let me just clear the information.

Yes that field is required because the email you scan need to be sent from somewhere. If you're interested in changing the from address, I would suggest talking with your IT about setting up the copier with a different outbound email address.
