Delete the Document path completely, there should not be anything there.
There is no log in name on the computer, when I go through your explanation below it only shows Everyone as an option.
You can't not have a username, it isn't possible.
Assuming you have a password for your account, use it, if you don't have a password, or don't know it, you have to create a user on the PC and give it a password, then add it to the share by clicking Add in the above screenshot in the folder sharing.

As another option I attempt to select the network option to scan, however it say that there is an unexpected communications error occured.
That will happen if you are using port 139 instead of 445 doing an SMB scan to Windows 7 and up.
But generically speaking, make sure the port is 445(1) and if Windows 10, make sure the PC Domain name or Workgroup is before the username(2)
For the username, easiest method to get the exact right format is from the share within windows itself ala: <exactly how it shows within the brackets>
You also could update the printer, but it won't fix your issue here with the settings as they are now.

I really do not know where I am going wrong!
I am trying to set up scanning to a folder on the network and it keeps coming back with an error (018-755), I have also tried to set up scan to e-mail - do I need to allocate the printer an e-mail address via our main providers?
