Scan to email destination

When I setup the address book with a contact with an email address why to do I need to also add a "Scan to destination" ? My destination is email.

The printer interface will not allow Scan to Email because the contact does not have a "Scan to destination" set. The manual implies that Scan to Destination is only required for folder / FTP type scan. 

I would appreciate some prompt assistance on this as it is nothing like as straight forward as it should be.
