If you require additional assistance with the driver or scanning please consider contacting your support centre.
Well it looks like the photos (screenshots of the Image Capture messages) won't display so here's what they said:
For a PDF file: The file may be damaged, Preview cannot open it
For a JPEG file: Scanner reported an error.
Clearly "Image Capture" is not the solution to this issue!

I've had trouble posting the error messages so let's see if you can see them here -- these go with my first reply (my #2) message:

OK so within a few hours Xerox replied and it is the same tired "Use Mac's Image Capture" program. Here's the messages (Xerox, my reply, Xerox's reply and my final reply just now): (Had to do this in 2 posts)
I received your request below for a Workcentre 3225 Scan Assistant utility that supports the Big Sur OS. Unfortunately, the Scan Assistant does not support Mac OS 10.15 and higher. We do have a Big Sur supported print and scan driver package available on support.xerox.com at this link. You will be able to scan using Mac’s Image Capture if you have this scan driver installed. This knowledge article and related solution might be of help to you.
I just filed my complaint and here it is:
Hello! We really need a 64 bit UpDate for the wonderful SCAN ASSISTANT program for Mac for WC3225 and other printers. Since Sept 2019 Mac Catalina and now macOS 11.x Big Sur cannot run 32 bit apps - and SCAN ASSISTANT is still only 32 bit. PLEASE upgrade your excellent SCAN ASSISTANT so that I can continue to use it on my Mac. Many, many people have written to XEROX about this. I've been calling and eMailing for over a year now. Just spoke with support. Everyone file a complaint here:

The more people that file it, the faster it will be fixed.
