Getting SSL error above when trying to scan using STARTTLS to Office 365. Guessing this requires a firmware update, but the one available for download looks too old to be helpful.

Yes, that error comes because you don't have a firmware that supports SHA-2. You would get the identical error on Gmail and Yahoo as well.
I believe this was added in firmware 75.14.93, and if that is the case, simply updating yours will resolve the issue and no data loss should occur

Call Xerox and provide a Wireshark trace of the scan so they can diagnose the failure.
Hi I am having the same issue with a Versant V180 Does it support TLS 1.2? and is it going to support TLS 1.2?
I have downloaded and installed the latest firmware 80.51.01 and it didnt seem to change any of thos settings in email setup.Please Help Thanks
Xerox hides Production firmwares so you cannot get them publically. You have to call.
I don't have access to any Versants to check, but if it supports TLS 1.2 I would assume like the rest of the FujiXerox devices it could be found in CWIS > Properties > Security > SSL/TLS Settings <Primelink for reference>
One thing to note there, no matter the firmware level or TLS support, do not have a check on Verify remote server certificate or it will fail with Gmail or Office365.
80.51.01 isn't even close to the latest firmware, it is probably the latest General Release.
80.53.11 is the latest.
If you have a Xerox contract, call support and if they state you already have the latest version. tell them you know you don't, and you need Versant 180 v80.53.11a MN System Software.zip and they can get it in GSN library 14261. It will be the third link in that library.
