Either you don't have rights to make changes or you are using a corrupted driver, or using Windows 10 Anniversary and a server installed driver.
The answer in all 3 cases is to install a new driver and make sure it is a local install. Since you neglected to mention anything of relevance about what you are printing from I can't link a driver since it could be any number of Windows/Linux/Mac PC's you are using.

For some reason my print dialog forgets the 'Glossy' paper and I'm unable to print properly. It always goes back to plain when I press OK (even if I don't leave the dialog and hold my mouse on the OK button), then the printer complains there is a paper mismatch.
Any reason for this?
