xerox 7120 scans to email very slowly (sometimes we dont receive email for an hour)

jorws,

When you do your scanning switch over to the Job Status screen and see if it says transferring and then completed. I bet it's says this rather quickly, def. not an hour, and the delay is on your email server side.
