Document Submit Settings??

I installed Freeflow Accxes Client Tools, and I'm messing around with Document Submit. I'm used to the old version of document submit, and this one is confusing me.

 

I need to be able to set it up so when I batch print, I can quickly select the paper size I need (I typically print 18x24, 24x36, and 30x42 using 24" and 30" rolls). What do I need to configure so I can do this quickly? I found where I can edit document options, and I was able to print off an 18x24 print just fine, but trying to print anything larger still uses the 24" roll and cuts off the drawing.
