It is a BW only machine. Grayscale is BW, the printer has white paper and Black toner.
Less dense toner just shades it as Grey.
There is no option to choose BW only because it s nearly useless
Take for instance this photo

All a BW option would give you is solid black in any place there was anything but an absence of data.
Grayscale uses shades of grey to convey the tones and Black to convey Black.
The only time somebody would prints color as solid black would be in specific cases, and never a photo. Drafting Documents mostly.
The other would be a white background and light colored text, which is fine digitally, but not in print due to CMYK versus RGB, and of course the absence of backlightling.
Acrobat/Reader has a few places beyond what is in that video too. If you choose the File > Print menu, select the printer then go to Advanced make sure Let Printer Determine color is checked, or in Acrobat its in Advanced > Color Management
Word has no real color options, but to get to the driver in Word when printing it is File > Print > Printer Properties > Image Options but this is not a color printer so you are quite limited.
Word can (in some versions) convert a job to Grayscale via Page Layout > Colors You could in theory use the Custom option to create a Black only setup
Also, notice that in both programs, BW and Grayscale are entirely interchageable, as they are in the Xerox driver, and the HP driver in the video by Adobe

There is a setting in Advanced too, where you can select high contrast or high brightness.
What if you check the feature in Adobe reader that makes the printer determine on it's own?
Just fiddle around with the settings in Adobe reader and see if that's any help?
You could try the global print driver, when the driver is installed go to Printer Properties -> Options -> select basic printing mode or Xerox Workcentre black and white, I do not know if it will help but you can always try as you now should be able to see an black only option. (if you choose the 5775 in the global driver, the black only option will disappear, guess the printer does not have support for this?)
This is only suggestions as a workaround.

As I stated in my original post, I can turn contrast up to 3. I am then at least able to read it, however, it is still a greyscale image.
Preserve black and K-only greys are already selected.
I don't understand why these printer drivers don't have a black only option. It is a standard feature that is commonly found in almost all printer drivers.
Hmm, what if you choose "High contrast" in the Advanced settings? Does that make a difference? (Advanced -> Image Options -> Grayscale"
When you're about to print from Adobe Reader you can choose to thick "print in black and white (grayscale)" and then go to "Advanced" and thick "Preserve black" and "Threat grays as K-only".

Follow Cheryl's steps again, though on number two when it says "Right-click on the printer, and select [Properties] from the menu" - I do think you should choose "Printing Preferences" instead as you're on win7.
You can also go here, to save the settings as default:
Devices and Printers -> Printer Preferences -> Advanced -> Printing Defaults.

Those are good questions. I was going to include that information in my last post and forgot.
Windows 7 64bit
Last week I was using driver: 5.185.41.0N 2011.01.31
Since then I have tried 5.196.12.0N 2011.07.18 as well as 5.303.16.0N 2013.02.08, as far as I can tell neither of those drivers have an option to print black and white only.

What OS are you using? Also have you downloaded and installed the latest driver for your machine? I will need to check the same driver you are using.
I don't seem to have that option. Please see screenshot below.
