I just tried to remove the printer from control panel and add it back again.
This time, I choose option "AirPrint", not default "Secure AirPrint".
And it seems to work fine.
I have exactly the same problem! Xerox B210.
When I try to print anything from a Catalina computer, only lots of pages of gibberish comes out.
When I try to print the same document from iPhone, everything is OK.
Just last week, it was all OK, even on the Mac.
Meanwhile I updated the Mac to catalina 10.15.4 AND the printer to latest firmware, so I don't know, if to blame Apple or Xerox.
Thanks for getting back with me.

Sorry it took so long to get back with you. I have been in email communication with support. The most recent thing we did was print from Macbook. I had to use Mac driver. Airprint did not come up as an option even though the macbook and printer were on the same SSID, so it looks like the printer is the problem according to email from Mildred G Vallejos Ramirez:
"I just needed to know if from the macbook your printing using air print as well because if from the macbook air printing is not working this is an issue with the printer itself. But we need to know if with the macbook the Air printing is working"
I don't see it ticketed in their queue, what RID/Log ID/Escalation number did they give you?
Yes, Airprint on. Called tech support, sent to 3rd level of troubleshooting. Waiting on call back from them.
Its just a discovery protocol, are you sure you actually turned on Airprint in the printer? (It is not enabled by default)
Just got the B215 printer. Everything working fine except Airprint. Can print from Win 10, MacOS Catalina, but not from iPhones and iPads. B215 printer does not show up in list of printers on these devices, though Brother and HP printers do show up on these devices. All Apple devices up to date, printer firmware updated, modem updated. Modem restarted, then printer, then devices. All devices on same SSID. Followed all instructions, but B215 still not showing on printer list. Thanks for help/suggestions!
