Where, in the "default options", is the option to set black-and-white or color?

Where you set preferences in Windows is Printing Preferences, but in the Apple Ecosystem, and Linux/Unix you must go into CUPS

 

 

Just enable CUPS , then do this

 

Open a web browser and go to “127.0.0.1:631” , Then select “Printers” at the upper right           

Then select the printer from the “Queue name” at the left

Change the dropdown box from “Administration” to “Set default options”

Choose your defaults, save and exit

Default black-and-white printing on OS X to WorkCentre 7970

Product Name: WorkCentre 7970

How can I configure the printer driver for a WorkCentre 7970 under OS X so that jobs are printed as black-and-white unless the user explicitly chooses color?
