I am having that same issue with Printer Xerox C310 Color printer shared from a print server.
I have installed Xerox C310 Color Printer V4 PCL6 driver on our Printer server to push out all printers via GPO, but it reset to a different driver version on windows 10 computers.
The Xerox Print Experience is already installed on the windows 10 pc and it still keep resetting the driver even when it is automatically deployed or if I install the one shared on the server.
Should I install the Xerox Print Experience on the server?

t one is using a V3 driver and was installed via Start > Control Panel > Devices and Printers
2nd one is a V4 driver and probably installed Via Start > Settings > Devices, it also requires the Xerox Print Experience app to be insrtalled to make it functional. But I advise against it since Xerox killed the V4 GPD
Our office runs a Server 2008 R2 print server. I have serveral users throughout my office that, when printing to our Xerox Altalink 8070 suddenly do not have the correct driver dialog box for printing preference, but rather a basic generic driver with limited options. Nothing has changed on the print server and the driver works fine for other users. All out users are using Windows 10 x64 for their OS. I've attached two pictures, one of the driver preferences users should/some do get and another image of the one users are getting that is not the correct driver.
