Not following printing settup

Product Name: Other - specify product in post
Operating System: Linux

I'm using the most recent version of ubuntu. I recently acquired a xerox phaser 3500 and am trying to get it all configured. Despite having turned on double sided printing in CUPS the printer doesn't print double sided when I try to tell it to. Instead it prints both pages on individual pages. The printer does this even when I send it a test print. The page handling was also originally set to "shrink to printable area" rather than "fit to printable area" causing documents I send to be smaller than the page even when I change the option. Can anyone help me?
