I had this issue - wouldn't send jobs to my printer, complained that it was out of ink.
I still have the "out of ink" status, but I can print again - in Lion.
Apple support directed me to do this:
- right click on the printer control panel and reset the printing system
- in finder, go to Computer, open the hard drive, open Library.
- trash the Xerox folder (no offense!)
- restart the Mac
- run the Xerox 10.7 printer driver installer
- try printing
The part I had been missing was trashing and restarting - I did all the other steps several times.
You'll still have the triangle / exclamation mark, but you have to ignore that and just print.
Hopefully this helps someone else.

Our Engineering department is continuing to work with Apple on this issue. Unfortunately I do not have any ETA as to when this will finally be fixed. I know in 2nd Level support we are anxiously awaiting a fix as well as you can imagine this causes quite a few calls to our department.

It sounds like you are actually having a spereate problem that was an issue introduced in 10.6.8. There was a supplemental 10.6.8 update released by Apple that fixes the "pausing" print queue issue. The supplemental update can be obtained here.

Contacted your Level 2 Support on November 8, 2011 to advise of the following: the problem with the "ink low or no ink" still exists with Mac OS 10.7.2. and a Xerox 8560MFP.
The previous error message "waste bin full" has disappeared since the OS 10.7.2. upgrade.
The final problem still needs to be fixed by Apple. Called them and (as expected) they pretend to have no clue and suggested me to call Xerox.

I hope this topic is still being monitored because I am running into this problem. I have been getting the same warning for about 4 months now on one of my Mac running 10.6.8 but it will print fine. Since last week, however, it refuses to print with this same warning. It pauses the job for no reason and cannot be restarted.
If I re-install the driver, it will work for about 2 days, then it starts pausing the print jobs again. We did not install anything new on this machine and this problem just start acting up last week. What is the solution? Everything was fine on my Mac before and now I cannot print anything.

It appears that some of the false status messages have been fixed in the latest OS 10.7 update (10.7.2) but not all. Our engineers are continuing to work with Apple on this issue.

Several of my users are also experiencing this issue with Mac OS 10.6.8 and all versions of Lion.
EDIT: To clarify, on 10.7.2, the print queue reports the Phaser 8560 is out of ink. It looks as if the waste bin data is being interpreted correctly by CUPS, but data on ink levels is not.
