Print job setting being overridden by the printers defaults

There is a VERY new firmware release available. Depending on the firmware vertion your on there is a process to follow to get you to version  firmware 62.80.82 Controler Rom 1.92.4.

We have a VersaLink C505 Multifunction Printer overriding the print settings of specific jobs using the default printer settings. We have tried using Word, edge, chrome, and adobe reader with the same issue. 

As an example, the default is double-sided and color printing. If we set the job to print single-sided and black & white, it will print double-sided and in color. We've updated the drivers, reset the printer; quadruple-checked every setting we can think of. 

Just out of ideas and wondering if anyone else has encountered this problem. I found some posts from 2017/2021 without solutions.
