A little update: The laptop and the server do communicate. kind of. When I ping the printer, the server does receive data, but it doesn't respond (the packets are sent and the little light where the cable is plugged in blinks, but the server doesn't send anything back to my laptop, hence the "destination host is unreachable" message). Maybe this isn't that relevant at all, but I thought I should mention it anyway. I guess replacing the NIC should fix everything.
I'm not familiar at all with the device in question, but the NIC is bad and will need to be replaced, no idea what that would entail.

I just got to the office and tried what you suggested. I connected my Win 7 laptop to the printer by doing exactly what you said, but unfortunately they don't see each other. I should mention that on the printer I only changed the usual network settings (IP, subnet mask and gateway), as the vendor is in another city and they weren't available at the moment. Other than that, I set everything just as you wrote. What should I do now?
Assuming you have DHCP on the LAN, set the server to DHCP, if it gets an IP the Server is fine and the settings were the problem, if it doesn't get an IP it will self assign a 169.xxx.xxx.xxx address and you will know it isn't able to do anything on the LAN.
Then give it a static IP address again and hook up a laptop via Crossover cable to see if the LAN being removed changes anything, if the Laptop and server don't see each other, the NIC is bad, if they do, the LAN is the problem.

From the Windows 7 client Workstation do the following;
IP Address: 10.1.1.1
Subnet mask: 255.255.255.0
Gateway: [leave-it-blank]
DNS Servers: [leave-it-blank]
From the Printer
IP Address: 10.1.1.2
Subnet mask: 255.255.255.0
Gateway: [leave-it-blank]
DNS Servers: [leave-it-blank]
We just got a Xerox 6204 Wide Format at our office and I have to set it up. The printer seems to be working fine, no faults or anything, although I'm unable to ping it or connect to the Web Interface.
I already checked the cable that connects the printer's server to the network and it's working just fine, so the problem isn't there. The IP address is 192.168.1.155, but when I ping it, it says that the destination host is unreachable. The Subnet Mask is 255.255.255.0 and the Gateway is 192.168.1.1, which seem to be fine by me. Also, DHCP is disabled, so that's ok too.
What should I do? I really can't figure out why I'm unable to connect to it.
