Spoke to some co-workers who have run into your issue before.
Turns out if the copier is set to BW Linux cannot over-ride and all jobs will be BW. This is due to the nature of how the data goes over from the PPD only option. It sends RAW data and the printer decides what to do. (I'm sure I could get a more thorough explanation if needed, that is "just the gist" as I understood it)
So in CWIS check Properties > Services > Printing > General

This actually has worked for everything except the color. I see in the ppd it shows this

Still, nothing though on print. I'll keep plugging away but if you have any other thoughts or wild ideas I'm happy to try with the understanding there is no official support on this and I'm doing this at my own risk :)

Unofficially speaking
On Xerox.com, grab the “Generic PPD” from the downloads page for the 7556.
Or grab the Windows XP PS driver, extract it on Windows or WINE (Its an EXE)
Extract it and it may do the ever so helpful “Add Printer Wizard” thing. Just close that.(Depends on the PPD,Driver)
Once it extracts, bring it, the files to the Linux PC and install the printer via CUPS, once installed you will have every feature available to the printer, but that is a problem as well. You will have all features even if you do not have all hardware, so you will indeed have 2,3 and 4 hole punch as well as folding even if you don't have a finisher. The features you do have will work, but Secure Print and Accounting will not be available at all.
Of course the PPD could be modified, but again, not something I or Xerox support.
For any kind of official help with any issues with the Official drivers you would need to get a support ticket with 2nd level support and go through that route.

There is a WorkCenter 7556 here that I have connected to two different linux flavors (Red Hat and Fedora.. yes I know they are related, but Red Hat is at least hardened) --- i've installed and used the official drivers from the xerox website but can not get color printing to work nor full duplex (or any other advanced feature).
Can someone help?
