It isn't actually 2 queues, it is the same printer using the same driver and even the same exact port on the PC, the only difference is you change the names when installing.
So like:
7225 color
7225 BW
Besides the names, nothing else is different, until you then go set the preferences in the BW one to use BW instead of color. Or any other change you want to add.
In order to create 2 different queues, did it require server share controls? I have mine setup for IP connectivity. Please let me know.

What we do at my place is setup two print queus for each copier. One defaults to B&W only and we designate that by putting a "-BW" at the end of the printer name. So we tell our users to use that if they want to print in black and white. Then we set up a second queue that we designate "-Color" and allow color printing to it. This way when the user wants to print in color they can select that printer and it'll allow them to print in color. We've had success with this as sometimes users don't realize what they're printing has color in it and if their accounting code only allows BW then printing to the BW queue converts the doc to BW and doesn't print out an error page instead.
Alternatively you should be able to set the BW/Color option on the print server if you only want one print queue. If you right click the printer you should be able to select "Set Printing Defaults..." and change any options there that would propgate down. You may need to set these again in a different section. Right click and select Properties... on the printer and then on the advanced tab there's a "Printing Defaults..." button. I've had issues where both had to be set before users started to see the changes. This would be a great resolution, however, the people that are printing are brokers and will need to print to color sometimes as well. At this point, I assume I am going to have to remote into every single employee's computer and change their default printer settings..over 100 people. :|
If you have the printer setup on a print server you can set the default properties there and that way the end users can not change the settings. Right click the printer, select Printer Properties and then go to the Administration tab. There's a "Black and White Only:" option that you can then enable and no matter what they send will always print to B&W

I have a few of these 7225's and I would like the printer to automatically choose "black and white" as the default instead of color.
I have found other articles showing how to change the printer color settings locally on the computer through Devices & Settings > Printer Properties, but this is not a viable solution as people would likely turn color back on.
