I managed to modify ppd file to select grayscale as an option, I added this section to ppd file:

*OpenUI *XROutputColor/Xerox Black and White: PickOne
*OrderDependency: 10 AnySetup *XROutputColor
*DefaultXROutputColor: PrintAsColor
*XROutputColor Unspecified/Printer Default: ""
*XROutputColor PrintAsColor/Off (Use Document Color): ""
*XROutputColor PrintAsGrayscale/On: "<</ProcessColorModel /DeviceGray >> setpagedevice "
*CloseUI: *XROutputColor

It seems to be working

I used MacOS driver and this post  as references

Xerox Versalink c7030 cups/Linux : can't print in Grayscale

Product Name: VersaLink C7020/C7025/C7030 Multifunction Printer

Hello,

 

We recently purchased a Versalink c7030 and to our disagreement despite the existence of a ppd and a Linux Driver we can't print in Grayscale through cups. We tried using the ppd from the MacOS and the Windows driver without success. We can print in color and set the 2-sided options but Grayscale / Black & White isn't working.

 

Has anyone encounter the same kind of issue before ?
