booklet prints small pages when starting from statement size paper

Product Name: AltaLink C8030 / C8035 / C8045 / C8055 / C8070 Color Multifunction Printer
Operating System: macOS 10.13 - High Sierra

Whenever I print a booklet it prints the pages really small, as though it were shrinking the page. My best guess is that it has something to do with the page size of my source (5.5 x 8.5, statement). I want to print a booklet on 8.5 x 11 (letter) size paper, and in every other printing scenario that I've worked from, a statement will print full-size on a Letter becasue it's exactly 1/2 the width of a landscape letter page (in the same way that letter size source files will print full-size on a 11x17 booklet). I talked to customer service on the phone and they don't really know much about it. They told me that I have to "scale to new paper size" because it won't print a booklet on a statement size paper (of course, not the booklet is suppose to be 2x the size of the origin file paper size). So, I scaled it to 8.5x11 (if I don't choose this option it automatically scales it to A4). Doesn't seem to matter what I do here, it doesn't fill the booklet page when printed. Any ideas of what I should be looking for? The xerox booklet printing instruction sheet is written for windows users and the mac driver has different features and different layout so it's not very helpful, just FYI. 

System:

MacOS Mojave, MS Word 2019 or Acrobat DC, AltaLink C8070
