xerox released a new universal driver, not sure if its also for the 7500, but you can try
to obtain it , call xerox and ask for this release : V 2.41.0 (636)
Unfortunately, I am having the same Colorsync experience with my OS X Snow Leopard upgrade and have to manually go to the "Color Matching" window and select "In printer" for each document I wish to print in color. And like you, I am looking for a fix. Please, share your fix, should you find one.
After updating to Mac OS X Lion on my Mac Pro I was pleased to see new drivers for the Phaser 7500. But unfortunately its not working as it should. When I go to print from any application, and select the color matching tab where I can select a colorsync profile the list is empty. I've tried checking permission, changing permissions on the colorsync folder and profiles, repairing profiles, uninstalling, reinstalling, creating a fresh user. Nothing works. Yesterday I called Xerox who blamed a bug in the OS. They suggested I try the old driver which they said works. But it doesn't. Today I added drivers for a colleagues HP Printer, that printer can see my profiles. So I would question the Xerox claim that its an Apple bug. So at the moment I can print but jobs don't come out as they are supposed to on my profiled papers. Anyone at Xerox care to respond?
