printing from phone always trys to print an order page from bypass tray

I also noticed in your screenshot of "Required Resources" that Tray 1 is set for A4 short edge feed (SEF). The Banner Page is calling for A4 long edge feed (LEF).

The speed of the machine can be improved if the A4 in Tray 1 is loaded as LEF.

If you do not need the Banner Page at all then you can turn it off.

top page is the unwnated one

tray 1 is set up for a4 and it prints the document from tray 1 as requested

But it then prints an additional 'order page' which I didn't ask it to from the bypass tray

If you are using the Xerox Print Services on your phone you should be able to select your paper size. My experience is that most PDFs are setup for A4 so the printer will ask that you load A4 in the bypass tray. If you change the paper size to letter, you shold be able to print from the main tray.

Checked both phone and printer setting but can't see anything in either unless I'm missing something?
This has happened on an apple and an android device
