if its grayed out, it means the bidirectional setup is set to automatic, change that first to manual or off, then its not grayed out anymore
If it's grayed out, you do not have the permission to change anything.
Do you have the printer installed on a non-virtual machine so you can test there?
I checked there and the option is greyed out. I assume this means on is my only option?
The strange part is that it goes away. Yesterday I had the option to hole punch and it worked. Today I checked again and the option isn't there. When I go to printer properties it isn't greyed out or not selectable, it's simply no longer there.

Sounds like the default finisher options, check that the driver is set to the correct finisher.
You can do this by rightcklicking on the correct printer -> Printer Preferences/Properties -> Configuration -> Installable Options

We have a xerox workcentre 7665 on every floor. Most people don't use the hole punch feature so I don't have a lot to go on but someone one the 11th floor needs to print with hole punch and the option disappeared from her computer for both the 11th and 10th floor printers. I installed the 10th floor printer on my computer and could hole punch. I then installed the 11th floor printer and no hole punch. Then a few days later when I followed up no hole punch on 10 or 11. I built a new print queue just to make sure it wasn't a problem with the server, I had the user add the new queue to her computer. She could hole punch at first but by the following week the hole punch feature was gone. The hole punch feature is on and available according to the web interface and the print queue on the server.
Does anyone have any idea on what could be causing this?
