and the only thing we can do is password protect the more administratuve parts of the Web UI.
In most Xerox devices the entire webpage can be blocked as requiring admin rights , you get the login and need to enter it before the page will load at all, but by default, you can view all but the Properties tab
Bit frustrating, we have Dell's and HP's and we can set it so that the web page doesn't display at all unless browsing from one machine, but I suppose different manufacturers do things differently.
I guess so, none of my Canon or Konica machines do that either as far as I can tell, I don't have an HP to test and the only Dell we have are the ones that are Dell Branded Xerox devices (Dell 7765, which is really a Xerox 7855 for instance)

It isn't at all port specific, you tell it to allow access from all except some IP address/ranges, or none except specific IP addresses/ranges. Anything being blocked will be blocked of any access at all. You could choose to just block TCP, but you will still near certainly break print as well.

It can't be done on/in/by the printer.
IP filtering is just IP's, you can't break it down by port/protocol.
Change the Admin credentials and set CWIS to always require admin credentials to access it.
I can't supply screenshots or a how to, Xerox doesn't sell those models in North America so I have none to check/screenshot

Is there a way to restrict access to the Centreware Internet Services web UI apart from certin IP addresses? We need to have it set so that access to the web UI is only available from one machine on the network.
