Hey Jonathan,
In the manual for the device there should be a section to setup this scan to workflow. You'll need to have a computer / Network share to point to, once that is done, You should be able to setup the scan to with out a problem.

So theoretically, Scan would be fine if you set it up, your actually issue is that you can't simply browse the LAN for shares. That would imply a Firewall or that the printer doesn't have DNS set up. In either case, simply creating some scan workflows would eliminate the hassle, because browsing will always be a slow process that involves a lot of typing at the printer, where as the linked method is just setting it up once and then picking from a list ever after
