Lately I have been unable to print with my xerox 7655 WorkCentre. I have the most up to date driver (3.56) and I am using Mac OS 10.10. As you can see, "accounting..." Is greyed out and not accessable. What do I do?

Accounting is handled (in normal circumstances) via Bi-directional communication.
The problem here is Apple does not allow this with 10.10, they actively block a 3rd party from access network resources from within an Application (In this case a print driver).
To work around this you need to set it up via CUPs.
Open a web browser and go to “127.0.0.1:631” , Then select “Printers” at the upper right
Then select the printer from the “Queue name” at the left
Change the dropdown box from “Administration” to “Set default options”
Select the “Advanced” link
Scroll down to the Accounting settings and set the defaults, then select “Set defaults” at the bottom of the page
The driver will now have the default set, you should reboot as some apps will hold previous settings until you do.
(With 10.8 and 10.10 the right-side scroll bar may not appear, just click in the white area and hit the down arrow on the keyboard.)
When you get the error about enabling CUPs on its webui just put what is in quotes into the Terminal then reload the page.
When it asks you for the login info it should be the same as your mac login, it has no relation to Xerox or any other printer.
