The app can be configured at design time to allow users to enter their own email address.
Here are the steps to accomplish this:
Launch the App Studio web site.
Log in.
On the Apps page, select the Create New Application button
On the next screen, select the Scan to Email option by clicking it's Create button
On the next screen (Create Scan to Email page), there should be 3 options listed:
Select the 'Users can enter their own destinations' option by clicking in the corresponding checkbox.
Click the Next button.
On the next screen, make any necessary changes to the scan features listed and then select the Next button.
On the last screen, enter the necessary information and then select the Done button.
The app will be created and will display on the Apps screen.
Go ahead and install the app on a device.
Launch the app.
When the app opens, there should be a button labeled Add Destinations.
Click the Add Destinations button.
A popup will display with Enter Destinations and Presets as options to select from.
Select the Enter Destinations option.
On the next screen, users can manually enter email addresses.
Also, I just wanted to share that the next release of App Gallery will include an option to select Multi-Page or Single Page output for scanned files. However, this option is only available when using TIFF as the scanned output. This has not been implemented for the other supported scanned output file types yet. Our feature request will be used when considering the other file types be added to this feature.

Thank you for your answer.
A have another question.
We have a customer who we have created an app for and they would like to put their own destination in the app.
When I share the app they are not allowed to edit the app so they can put their own addresses in the app.
I have tried to create both an customer invite account and a normal subaccount but still they can not edit the app.
Is this feature locked or can it be handled different?

You are correct. The Scan to Email app does not currently offer the option to split a scanned file into a separate file for page scanned.
I will enter this as a Feature Request for the team to consider in a future release.

I have created this app for a customer but I am missing some features for the scan process.
The option I miss is the feature to choose a file to be splitted in 1 file per page you scan. This option is possible if I use the Email app on the machine that follows the machine.

Is this an option that would be available in the future or is there something I am missing?
